How To Make A Lemon Tart

Lightly grease a 2cm-deep, loose-based round flan pan. Combine biscuit crumbs, cinnamon, nutmeg and butter in a bowl. Then press into base and sides of prepaed pan. Refrigerate for 1 hour.

Make lemon curd: Finely grate rind of 1 lemon and juice all lemons. Whisk eggs and sugar together in a heatproof bowl until well combined. Add lemon rind and 2/3 cup lemon juice, whisking constantly until well combined. Then place bowl over a saucepan of simmering water (don’t let the base of the pan touch the water). Cook, stirring with a wooden spoon, for 20 to 25 minutes or until thick and custard-like. Do not allow to boil. Remove from heat and whisk in butter.

Pour lemon curd into chilled tart case. Cover with plastic wrap and refrigerate overnight. Dust with icing sugar and serve.

How To Make Pancakes:
Ingredients:
- plain flour
- 2 eggs
- milk
- butter
- water
Method:
- Measure out 4 ounces of plain flour into a big bowl
- Crack two eggs into the the bowl with the plain flour and whisk until they combine
- Pour 7 ounces of milk into a measuring jug and 3 ounces of water in the jug as well. Keep whisking the egg and flour while pouring the milk and water into the bowl
- Continue whisking until you get a yellowish liquid that is smooth
- Get out a pan and put it on the stove
- Measure out 1 quater of a block of butter and put the quarter of butter in the pan. Put the stove on a low heat.
- Allow the butter to melt in the pan, the pour some of the batter into the pan and wait for the pancake to go a crispy golden colour on one side. This usually takes about 3 minutes for one side of the pancake to cook. When the side of the pancake has finished turning a golden colour, get a spatula and flip the the pancake so the uncooked side is cooking for 2 minutes
- When the pancake has finished cooking, put the spatula under the pancake and flip it onto a plate
- Put the topping that you want on the pancake and fold it up
